Creamy Carrot Soup

There’s no way I voluntarily sip soup unless the weather is fresh, can you imagine hot soup in a 104ºF (40ºC)? Well, I don’t, I think is not cool (pun intended) to sweat bucks in hot humid weather, fortunately Villahermosa, the town I live in, has been fresh and cozy and I thought this tasty Creamy Carrot Soup with a spicy touch would be perfect, I used a hint of Cayenne pepper in order to take this creamy soup to another level ;P

And we all know how bacon always makes everything tastier, I browned a couple of slices to add a crispy and salty feature to my creamy soup, bacon is optional you can skip it or choose a different topping perhaps some grated parmesan cheese on top, few croutons or even some crispy tortillas, any topping you like would be fine, you’ll see! I managed to eat two full bowls of this Creamy Carrot Soup because it’s SO good! n_n

A cream with no cream? You would not believe how creamy and silky this carrot soup it is, healthy and nutritious and with a spicy hint for these Autumn days.

Ingredients



  • 4 medium carrots, chopped
  • ½ large onion, chopped
  • 1 cup of potatoes, chopped
  • ½ tsp. of Cayenne pepper
  • ½ tsp. of turmeric
  • 2 garlic cloves
  • 1 sprig of thyme
  • 1 lt. (33.8 lq. oz.) of chicken or vegetable broth
  • 1 tbsp. of olive oil
  • Salt and pepper, to taste
  • Bacon, optional
  • Instructions

    1. Brown the bacon in the bottom of a Dutch oven, we’re using a deep pot to make our creamy soup. Once the bacon is crispy, off the heat and reserve.
    2. Discard the bacon grease and add the olive oil, add onion, carrot and the garlic, stir-fry the veggies once they’re all browned season with salt and pepper, when the onion is soft, add the spices, then add the chicken broth and cook until all the vegetables are soft and tender, about 15-20 minutes.
    3. Off the heat, let the vegetables decrease in temperature, and process in a blender until you have a silky and creamy soup with no lumps in it, transfer the Creamy Carrot Soup back to the pot, serve with some bacon on top ;D

    Yield: 2 servings

    Cook time: 00 hrs. 20 mins.
