The Clafouti is a baked traditional French dessert of fruit, is puffy and crispy on top, is usually served lukewarm so it’s perfect for breakfasts too. It’s also a very adaptable dessert because you can make it with almost any fruit you have in hand… Today’s recipe is a classic Cherry Clafoutis… but there are numerous variations using other fruits like plums, apples, pears, figs and more!
…And these type of desserts are just awesome because they’re easy-to-do and zero stress, clafoutis are very rustic desserts, those that are reminiscent of home, you know what I mean, right? You smell clafoutis right off the oven and BAM! Suddenly you evoke some childhood memory… which in my case is very uncanny because my mom in particular never baked a clafouti hahah, but somehow that feeling came to me the first time I tried clafouti, like experiencing something made by mom n_n
Believe me when I say that clafoutis are foolproof, they’re SO SIMPLE like tossing all the ingredients to the blender or even to a bowl, mixing and then to the oven! That’s it! I just remembered that clafoutis was one of my first recipes to be published in an online cooking magazine. There are some old pics pinned at the end of this post from those early days! This particular recipe is an adaptation from ‘Modern Classics’ by Donna Hay which is one of my favorite cookbooks ever, if you aren’t familiar with Donna Hay go, go, go and google her! I’m a huge fan of this Australian chef, I love her magazine, the touch she gives to the dishes she prepares, I hope someday to be just like her! What about you… Which is your favorite cookbook? There’s nothing more traditional and French than a cherry clafouti… and is so versatile and delish that you’ll be baking one of every fruit ;P
- Mix the cream, the eggs, sugar, and the flour, with the vanilla paste in a bowl or a blender until smooth. Set aside. Remember that all your ingredients must be at room temperature before baking.
- Preheat oven at 350ºF (180ºC)
- Use the brown butter to grease the bottom of your baking dish, you can skip this step or use regular butter.
- Pour the clafouti batter over and distribute the cherries. Bake for 30-35 minutes or until puff and golden.
- Off the oven and dust with icing sugar… and for those with a sweet tooth like myself you can serve this Cherry Clafoutis with some ice cream ;D

Cook time: 00 hrs. 35 mins.
Total time: 45 mins.
