B-R-O-W-N-I-E-S! That’s right! Today in Chokolat Pimienta I’m showing you how to make Vegan Brownies and they’re gluten free *om nom nom nom*... oh, please don’t make those ugly faces, seriously they’re hyper tasty and easy to do, you’ll see these Vegan Brownies pass for regular brownies… For instance, my husband is mega picky with food and He loved these brownies, he didn’t even notice until the whole batch was all gone.

The cacao nibs give a strong, adult and super infused cacao taste in these Vegan Brownies and there’s a hint of coconut flavor that the coconut oil adds to the mixture. A friend of mine, Adri was keeping all the brownies to herself, she wouldn’t give a taste of them to her boyfriend, she kept saying “… my preeeciooous, my preecioous” she was a little Gollum on the way, seriously, these Vegan Brownies are build to make an addict out of you.

Perhaps you’ll notice that this recipe has kind of a long ingredients list so you can make your own mega delish Vegan Brownies, but once you got everything the procedure is just about the same than doing regular brownies, if you made them before these will be as easy to do than usual, pinky promise haha ;-) Anyways you can switch the alternative flours I used in these recipe (almond, oatmeal, etc) for a gluten free all-purpose baking flour, but I wouldn’t recommend to use plain flour.

Something I wanted to add to this mixture was a little bit of apple purée because it gives a natural, light and moistly texture and obvious that limits the amount of coconut oil we’re using so instead of you having a batch of oily shiny brownies you’ll have the most perfectly luscious Vegan Brownies no one ever have tried before. You can use coconut milk, rice milk, hazelnut milk instead of almond milk, that’s totally up to you it works perfect with any milk you have, even with dairy milk but obvs those wouldn’t be Vegan Brownies anymore hahah I’m just saying :P


My Precious Vegan Brownies

Scrumptious and healthy vegan brownies, egg-free and gluten free, these precious brownies are a crowd pleaser and ready to quell the most exigent cravings!


Ingredients



  • ½ cup of oatmeal flour
  • ½ cup of almond flour
  • ¼ of cornstarch
  • ½ cup of cocoa powder
  • 1 tbsp. of baking powder
  • ½ cup of muscovado sugar
  • 2 tbsp. of flaxseed, ground
  • ½ cup of almond milk
  • ¼ cup of coffee, freshly brewed
  • ¼ cup of coconut oil
  • ¼ cup of apple purée
  • ¼ cup of cacao nibs
  • ¼ cup of pecans, roughly chopped
  • Instructions

    1. Preheat oven over 350ºF (180ºC). In a bowl mix all dry ingredients with the sugar and mix with a whisk.
    2. In a different bowl mix the wet ingredients altogether including the apple purée.
    3. Then mix the dry ingredients into the liquids mixture, and whisk but not thoroughly, add the cacao nibs and the pecans.
    4. Pour the batter into an 8x8 inch (20x20cm) lined pan.
    5. Bake for 20 minutes over over 350ºF (180ºC). Let it rest before cutting.
    6. Try not to eat the whole batch in a day, once you bake these My Precious Vegan Brownies you can storage them in the fridge for a day or two for the flavors to enrich themselves n_n


    Yield: 9 servings

    Cook time: 00 hrs. 20 mins.
    Total time: 30 mins.
