Anyways leaving newscasts aside, Today I'm showing you how to make these delicious and hyper healthy Spring Rolls... or should we call it Summer Rolls, what was I talking about? oh yup... A while ago I was in the mood for some tasty but fresh and light meal, so I made these Spring Rolls with Peanut Dipping Sauce and these rolls are sooo delish that I wanted to share this recipe with you, so if you're a veggie lover as myself, this recipe is for you!
Handling rice paper is a little tricky, more sticky than I thought, but is kind of fun, I mean mastering any art takes practice so if you're not starving and have a little time extra on your side you can try to make these at home. The peanut dipping sauce is a bittersweet sauce, perhaps you could think is a wild mixture but believe me, it goes perfect with those veggie rolls! and the chili flakes totally complement the sauce n_n
Spring Rolls with Peanut Dipping
- 6 rice wrapers
- ¼ cup of cilantro, fresh
- 1 sweet red pepper
- 1 sweet yellow pepper
- Surimi sticks
- 1 carrot
- 1 cucumber
- Lettuce leaves
- Bowl with water
- 1 tbsp. of mirin
- 1 tbsp. of sesame oil
- 2 tbsp. of soy sauce
- 1 tbsp. of peanut butter
- ½ tsp. of ginger powder
- Chili flakes (at taste)
- Rinse and chop all your vegetables in juliennes and reserve.
- Start by softening the rice paper in a large bowl of warm water, don’t soak the rice wrapper for too long or it will break, just quickly immerse the rice paper in the bowl for a couple of seconds, the rice paper should come out of the water slightly firm but soft. Lay rice paper on a damp cloth.
- Arrange all your julienned vegetables and surimi stick at the center of your rice paper. Now the rolling part begins! Gently pull up the bottom to the center covering part of your veggies, then you fold both sides and tightly roll up the roll to the top!
- Put all the ingredients of your dipping sauce in a bowl and whisk until well combined, add some chili flakes for a spicy and tasty change!

Cook Time: 00 hrs. 00 mins.
Total Time: 30 mins.
