And now we’re back on track with more ad hoc recipes for this Summer, here in Tabasco the weather is terribly hideous, and nothing is more appealing than this Passion Fruit Popsicles, that are hyper delish and SO GOOD!!!
This popsicles are an adaptation of my mom’s ice cream recipe that obvs I was craving for… Basically she used to ground some Graham crackers, put them in a mold, and covered the crackers with a tasty mixture of yogurt, lime juice or passion fruit, some condensed milk and voila! Instant ice cream, velvety, acidic and with a sandy cracker crust… that ice cream is mega awesome and it’s somehow similar to a Charlotte…I got a little carried away with my mom’s recipe (sorry mom) and I was able to give it a slight twist and create this succulent Passion Fruit Shell Shaped Popsicles and the sand is made of yummy ground Graham crackers, adding texture to a Summer dessert that we believed was already perfect! ;-)
This recipe is also a good call to give your kids the chance to get involved in projects at home, give a hand around the kitchen and make the Graham crackers crumbs themselves; you just put the crackers in Ziplocs and teach them how to ground the crackers, at the end the sandy beach where these Passion Fruit Popsicles will lay will be their creation, it’s so easy!
To make them look like shells in the beach I used my Madeleine pan but if you don’t have this type of baking pan you can totally use paper cups, little plastic tumblers or regular popsicle trays. Also if you can’t find passion fruit you definitely can make this popsicles with lime juice, or any other puree fruit of your preference. I recommend acerbic flavors because, seriously Summer asks for it, the freshness that acidic fruits bring to the table is the best!
Passion Fruit Popsicles
Popsicles... creamily guilty, rich and smooth with an acidic taste enriched by the sandy texture that only Graham crackers have, perfect for those hot evenings at the pool!
- Pour in a bowl the Greek yogurt, the whipped cream, condensed milk and the passion fruit pulp, whisk until well combined.
- Pour the mixture into the Madeleine pan, make sure your pan is chilled, put the wooden sticks, cover and freeze until firm, 1-4 hours.
- When the popsicles are firm let them rest a couple of minutes outside the freezer, push gently the shell shaped popsicle outside the mold, try not to pull or perhaps the stick won’t hold the popsicle!
- Serve your Passion Fruit Shell Shaped Popsicles on a bed of delicious ground Graham crackers and enjoy!
