Buckwheat Crepes Stuffed with Mushrooms

 Let's start this monday without meat with a delicious recipe, it's super nutritive and easy to prepare, buckwheat crepes; this out of the ordinary crepes, filled with that distinctive buckwheat flavour, with an earthy and sweet flavour, but it matches perfectly with the mushrooms, and even more with the touch of wine, it adds a whole new dimension.

 A few months ago I didn't know what buckwheat was, but doing research on other kinds of flours to use in my kitchen, flours that add more nutrients and vitamins, when I found out about it, i was pleasantly surprised, even if its color is gray-ish, and it might not look pretty on food, when you taste it, everything changes, you might see that I've used it on previous recipes, today I bring it up again for you to cheer up and try it, you can find it Online, Sadly it's still not on stock on local supermarkets here in Mexico, but you can look around on the gluten free aisle on your local supermarket, and you might find it.

Buckwheat Crepes Stuffed with Mushrooms

This delicious crepes, filled with various types of mushrooms and spinach is ideal for a light lunch, It's filled with nutrients and with the characteristic Buckwheat flavour.

  • 3 eggs
  • 1 1/2 cups of milk
  • 1/2 cup of flour
  • 1/2 cup of buckwheat flour
  • 1/4 teaspoon of salt
  • 1 tablespoon of vegetable oil
  • 3 tablespoons of butter
  • 1/4 of frozen onion
  • 2 cloves of garlic
  • 1 cup of cremini mushrooms
  • 1 cup of shiitake mushrooms
  • 1 cup of spinach
  • 1/4 cup of parsley
  • 1/4 cup of white wine
  • Salt and pepper to taste

                            Tips: Use a frozen onion, it allows to lower the strong onion flavour and it doesn't make you cry while you chop it, on the other hand, use a very sharp knife to chop your vegetables, if you notice, I switched knifes on the video to do a better job.

                             If you can't find shitake mushrooms, you can use champignons or cremini mushrooms, and if you can't find buckwheat flour, you can replace it with regular flour.

                            Serves: 12 Crepes
